Scallion Egg Crepe

Here’s a simplified, quicker version of scallion pancakes that takes less than 10 minutes to make. Enjoy this for breakfast with a side of cucumbers and fruit.

A few notes:

  1. I used the JUST Egg liquid scramble for the vegan liquid egg but any alternative will work just fine.
  2. I highly recommend using Yondu for maximum flavor. You can find Yondu on Amazon here. 
  3. The crepes are best enjoyed immediately.

Ingredients

1/2 cup vegan liquid egg

1/2 cup all-purpose flour

1 cup water

1 tbsp yondu or soy sauce

1 scallion, roughly chopped

1 tsp white pepper

2 tbsp oil

Cooking Instructions

Step 1
Combine all the ingredients except for the oil in a bowl. Mix well.

Heat up a 9” nonstick pan and add 1 tsp of oil. Add about 1/4 cup of the batter to the pan. Cook for about 2-3 minutes on each side. Repeat this process until you use up all the batter. There should be about 4 crepes.

Serve with cucumbers and fruit. Enjoy immediately.
