Pandan Sticky Rice

It’s easy to appreciate rice for so many reasons. It’s delicious served alone, stir-fried, or even as a dessert. For those who are unfamiliar with pandan, it’s like vanilla extract. It gives the sticky rice a wonderful fragrance and paired with coconut cream, it’s delicious and not too sweet.

1 cup sticky rice (aka glutinous rice)

1 drop (approx 1/8 tsp) pandan extract

1/2 tsp salt

1.5 cup coconut milk

1 tbsp sugar

cornstarch slurry (1 tsp corn starch + 2 tbsp water)

1 tbsp roasted sesame seeds

Cooking Instructions

Rinse the sticky rice and soak with about 2 cups of water overnight in the fridge (or at least a few hours before steaming).

Drain the water. Add pandan extract, salt, and 1/2 cup coconut milk to the rice. Toss everything together. Transfer to a parchment paper lined steaming basket. Steam for 40 minutes.

To make the coconut sauce, heat up 1 cup coconut milk and 1 tbsp sugar in a small pot for a few minutes. Once heated, add the cornstarch slurry and keep warm on the stove for a few more minutes.

Serve the pandan sticky rice with the coconut sauce and roasted sesame seeds.
