Fried Shallots (Hanh Phi)

Crispy, sweet, and full of flavor, fried shallots are a staple topping in Vietnamese cuisine. This can be made in 10 minutes and enjoyed throughout the week.

Notes:

  1. During the frying process, there should be enough oil to cover the shallots. One cup of avocado oil should be sufficient but feel free to add a bit more as needed.
  2. It is crucial to monitor the shallots around the 4-5 minute mark. If it begins to turn light golden brown, remove it immediately as it will continue cooking.
  3. Store any leftover fried shallots in an airtight container at room temperature for up to one week. Save the oil used to fry the shallots in a separate airtight container for stir-frying or another purpose.

5 shallots, thinly sliced

Cooking Instructions

Prep the shallots. Transfer the shallots to a plate in a single layer. Microwave for one minute. Dab excess moisture with a paper towel.

Add the shallots to a small pot along with the oil, enough to cover the shallots. On medium heat, fry for about 5-7 minutes. Remove immediately with a spider strainer when it begins to turn a light, golden grown. It will continue to cook once removed.

Transfer the shallots to a paper towel lined plate to absorb excess oil. Sprinkle a pinch of salt. This can enjoyed as a flavor boost to any salad, noodle, or rice dish.
