Harissa Enoki Mushrooms

Enoki mushrooms have a mild flavor and are the perfect blank canvas for this sweet and spicy harissa sauce. This harissa enoki mushroom recipe takes less than 10 minutes to cook. If you haven’t tried enoki mushrooms before, here’s your sign to try it!

A few notes:

  1. Enoki mushrooms can be found in most Asian grocery stores.
  2. Although date syrup is used in this recipe, it can be substituted with maple syrup or sugar.
  3. I used harissa paste from Trader Joe’s. Most grocery stores these days carry pre-made jars of harissa paste or sauce.
  4. Store any leftovers in an airtight container in the refrigerator for up to 2 days.

Ingredients

1 enoki, trim off root ends

1 tbsp date syrup

1 tbsp harissa

2 tbsp olive oil

Pinch of salt and black pepper

1 garlic clove, minced

Cooking Instructions

Step 1
Prep the enoki. Heat up a pan with 1 tbsp of olive oil. Add the enoki mushrooms and cook for 3-4 minutes.

Meanwhile, combine the date syrup, harissa, 1 tbsp olive oil, salt, black pepper, garlic, and water. Mix everything well together and add to the enoki. Cook for another 1-2 minutes. Garnish with fresh parsley. Serve immediately with rice.
