Plain rice congee is the ultimate comfort food. It’s gentle on the stomach when you’re feeling sick and ultra-hydrating. All you need is 3 ingredients and a pot to make this silky and soothing bowl of congee.
Notes:
- Short-grain white rice is best used for this recipe to achieve a soft, velvety, and smooth texture.
- Rinse the rice using a fine mesh strainer, air dry the rice for a few minutes, and freeze for at least 6 hours. This is a technique I learned from the Woks of Life to save time when cooking congee.
- Store leftovers in the fridge for up to 3 days. Reheat in the microwave or on the stovetop with 1/4 cup of water before serving.
