Plain Rice Congee

Plain rice congee is the ultimate comfort food. It’s gentle on the stomach when you’re feeling sick and ultra-hydrating. All you need is 3 ingredients and a pot to make this silky and soothing bowl of congee.

Notes:

  1. Short-grain white rice is best used for this recipe to achieve a soft, velvety, and smooth texture.
  2. Rinse the rice using a fine mesh strainer, air dry the rice for a few minutes, and freeze for at least 6 hours. This is a technique I learned from the Woks of Life to save time when cooking congee.
  3. Store leftovers in the fridge for up to 3 days. Reheat in the microwave or on the stovetop with 1/4 cup of water before serving.

1/2 cup frozen short-grain white rice

Cooking Instructions

Combine the frozen rice and water in a 2-3 quart pot. Heat until boiling. Reduce to a simmer, cover and cook for 15 minutes.

Season with salt to taste. Garnish with scallion, mushroom floss, and fresh ginger, as desired.
