Spicy Ginger Scallion Cold Tofu

Spicy ginger scallion cold tofu is a refreshing and satisfying meal that can be made in minutes. This dish is light and healthy, yet it is also packed with flavor from the aromatic oil. It’s perfect for a quick lunch or dinner.

Notes:

  1. To speed up the preparation time, use a microplane to mince the ginger and garlic.
  2. This recipe works best with silken tofu. Alternatively, you can use soft tofu if silken tofu isn’t available.
  3. Any type of chili powder such as gochugaru, cayenne pepper, or ancho chili would work for this recipe.
  4. Store leftovers in the fridge for up to 2 days and enjoy cold.

1 12 oz silken tofu

1 scallion, cut into coins

1 tsp ginger, minced

1 garlic clove, minced

1 tsp gochugaru

Cooking Instructions

Combine the following ingredients in a heat-safe bowl: scallion, ginger, garlic, gochugaru, sugar, and salt.

Meanwhile, heat up the oil in a small saucepan until 200F or place a wooden chopstick inside to check for bubbles to know if you oil is hot enough. Carefully pour the hot oil in the heat-safe bowl with the ingredients. Mix everything well together.

Pour the spicy ginger scallion oil and soy sauce over the cold silken tofu. Serve with optional cucumbers and chives. Enjoy with rice!
