Spinach Sesame Cold Noodles

This cold noodle dish takes less than 10 minutes to prepare and does not require any chopping. It is the perfect side dish that will keep you light and cool for the summer. The noodles are creamy from the flax seeds and flavorful from the sesame and spinach.

Notes:

  1. Somen noodles are used for this recipe for its mild flavor and springy, chewy texture. They are made from wheat flour and water, and they are very thin, about 1 mm in diameter.
  2. Flax seeds contain a soluble fiber called mucilage, which forms a gel-like substance when it is mixed with water. This gel can help to thicken sauces and gravies.
  3. This recipe is best enjoyed immediately. Serve with plant-based protein and vegetables for a complete meal.

1/4 cup tahini

Cooking Instructions

Combine the garlic, tahini, spinach, soy sauce, sesame oil, sugar, hot water, and flax seeds to a food a processor. Blitz until smooth. Allow it to sit for a few minutes for the flax seeds to thicken the sauce.

Cook noodles according to package instructions. It usually take 1-2 minutes to boil. Rinse the noodles with cold water.

Transfer the noodles to a bowl and add 2-3 tbsp of the sauce or more if desired. Finish off with sesame seeds and furikake.
