Vegetable Congee

Vegetable congee is the perfect dish any time of the year, especially for cold days when you want something soothing. The carrots and corn bring a hint of sweetness, the broccoli delivers a crunchy bite, and the ginger releases a peppery zing.

Ingredients

1/4 cup frozen sweet corn

1/4 cup carrots, diced

1/2 cup broccoli, roughly chopped

1 tbsp ginger, minced

1 tsp mushroom seasoning

1/2 tsp white pepper

1/2 cup short grain rice, frozen

5 cups water

Cooking Instructions

Rinse the rice and store in a container in the freezer overnight or at least for 3-4 hours.

Heat up the water in a pot. Once boiling, add all the remaining ingredients including the rice. Mix everything well, cover with a lid, and simmer for 15 minutes. Enjoy immediately!
