This tofu rice cake soup is a one-pot meal inspired by the Korean rice cake soup called tteokguk. It is made with a simple vegetable broth, chewy rice cakes, and silken tofu.
Notes:
- Campari tomatoes are used in this recipe to add sweetness to the soup.
- Oval-shaped rice cakes can be found in most Asian grocery stores, as well as some specialty food stores. When choosing oval-shaped rice cakes, look for ones that are made with glutinous rice. Glutinous rice is a type of rice that is high in starch, which gives the rice cakes a chewy texture.
- Store in an airtight container in the fridge for up to 2 days. The quality of the rice cakes will start to deteriorate after 2 days. The rice cakes will become harder and less chewy, and the flavor will start to fade.
